Healthy Peach, Balsamic, Grilled Chicken + Goat Cheese Lettuce Wraps!


Summer is right around the corner and many of us have already had a taste of the luscious warm weather & sunshine.  Summertime means firing up the grill and creating & enjoying almost every meal on my back porch - by far one of my favorite pastimes.  It also means lots of bright, fresh & juicy produce!  Be sure to hit up your local farmers market to get the absolute best produce in your area.  BONUS: by shopping at farmers markets you’ll also be supporting local products, and therefore, local people - strengthening your community & local economy while enjoying the freshest food available.  Sounds like a good deal to me!

To kick off the start of summer I have a tasty & healthy recipe for you that combines fresh ingredients and will leave you feeling full, satisfied & ready for summer.  This dish doesn't take long to make and the combination of flavors is simply divine.  Fresh, juicy peaches paired with tart goat cheese, baby tomatoes & lean grilled chicken - all wrapped inside crisp leaves of Romaine lettuce & topped with tangy balsamic vinaigrette.  Check out the mouthwatering photos below, followed by the easy peasy recipe for these bad boys.  Enjoy!

Healthy Peach, Balsamic, Grilled Chicken + Goat Cheese Lettuce Wraps!


Ingredients
Makes enough for 2 people

- 1 head of Romaine lettuce (you’ll need 1 - 2 large lettuce leaves per person)
- 2 boneless, skinless chicken breasts - thawed & lightly seasoned (season lightly with pepper & salt or your favorite seasoning blend)
- 2 medium ripe peaches, sliced
- 4-6 baby tomatoes, sliced (I used a colorful mix I got from Whole Foods - any small, grape tomato will work)
- About 2 tblsps goat cheese crumbles
- ¼ tsp cracked black pepper
- 1 tblsp balsamic vinegar (more to taste if necessary)

Directions

Spray grill grates with cooking spray, then preheat grill to medium-high heat.  Place thawed chicken breast on grill - let cook on one side for about 5 mins, then flip and cook for another 5 mins.  Depending on the thickness of the chicken breasts and the temperature of your grill, you may need to cook longer.  Always cut chicken open to check that it is cooked through and make sure it’s not raw.  Once chicken is cooked, removed from grill and set aside.

Cut desired amount of lettuce leaves from head of Romaine; wash leaves & pat dry.  Set them aside on a plate.

Slice up tomatoes and peaches (discard peach pits or compost).  Slice up chicken breasts and add on top of lettuce leaves, then add the tomatoes & peaches.  Sprinkle the goat cheese evenly between the wraps & top with cracked black pepper.  Drizzle the balsamic vinegar over the top of the wraps & enjoy!
